Researchers at Cornell University have sequenced the genome of maize and can now identify those that code for vitamin E production. With the new genes identified, it’s possible to create a new breed of maize with an increased vitamin profile. Since maize breeders are already looking to increase vitamin A content, with the new gene sequence, they can increase E as well. The combined effect will produce a food source with healthy tocochromaols and retinoids that are necessary for good health.
Of course most health concerned individuals will be concerned about the GMO part of the equation but an interesting read nonetheless.
